In my opinion my mom is the greatest cook (really everyone would say there own mother is the greatest, so lets roll with it). Here’s one of my favorites, salmon burgers.
Makes 6-8 salmon burgers. That’s 112-150 calories per burger!
2 6-ounce pouches of salmon
1/4 cup finely chopped onion
1/4 cup green pepper finely chopped
1/3 cup mayonaise
1/2 t garlic powder
1 T lemon juice
1 egg, beaten 2 eggs beaten 1 cup breadcrumbs 1/2 cup Panko breadcrumbs
1/2 t lemon pepper
1/4 t seafood seasoning
Chopped parsely or tarragon
1. Mix all of the ingredients together in a large bowl. Form mixture into patties (makes about 6-8 burgers).
Saute in a pan with a little olive oil until golden brown. Use a non-stick grill such as a George Foreman. Easy to clean. About 4-5 minutes per side. I used a circle egg ring to make perfect patties, easy to flip.
