Terrific Recipes Tuesday: February 14th

 

 
This is Thursday’s edition of “Terrific Recipes Tuesdays”.  It may be two days later in the week but it’s a great one none the less!  Everybody loves breakfast.  Breakfast for dinner, breakfast for lunch, breakfast anytime.  Here is a great pancake recipe.
 

Brent’s Protein Bomb Pancakes

 

Makes 4 servings (8-12 pancakes depending on size).  385 calories per serving, 20 grams of protein, 52 grams of carbohydrates, 11 grams of fat.

 

Ingredients

 

1 cup whole wheat flour

1 cup rolled oats (instant oats will work as well)

1 Tablespoon baking powder

Pinch of salt

1 cup of skim milk

1 Tablespoon oil (canola, olive, etc)

1 Tablespoon honey (local organic if possible)

1 egg

1 scoop protein powder of your choice (I choose vanilla)

Berries (optional)  I used the ones I place in the freezer from the summer!

 

 
1) Mix dry ingredients (flour, oats, baking powder, salt).
 

2) Add wet ingredients (egg, milk, oil, honey).
 

3) Add protein powder and make sure it is all well mixed.
 

4) Turn heat medium low and spray/grease griddle.  Use 1/4 cup measuring cup to scoop out pancake mixture.
 

5) Place berries into pancake while it is in the pan.  Cook until bubbles form, just a few minutes.  Then flip pancake and cook for another 1 to 2 minutes until golden brown.
