With the New Year in full swing I’ve decided to add another installment to my blog to go along with Medical News Mondays.  This will be a great resource for those that have made resolutions and goals for the New Year.  If you still haven’t decided to begin exercising and becoming healthier than I suggest you read all about your why your excuses are no good.  If you are unsure where to start then begin with something simple like a walk.  The new installment will be called Terrific Recipes Tuesday!

 

 
Here is your first delicious recipe:
 

Mediterranean Grilled Chicken Kebabs

 

This recipe yields 8 servings when prepared as follows and makes a great reheat meal for the next day’s lunch or dinner.  Serving size is 2 kebabs (244 calories, 23 g protein, 13 carbohydrates, 10 fat).

 

Dressing:

 

1 cup fresh orange juice

2 1/2 tablespoons balsamic vinegar

2 tablespoons fresh lemon juice

2 tablespoons pomegranate molasses

2 teaspoons grated orange rind

2 teaspoons minced fresh rosemary

1 teaspoon salt

1 teaspoon brown sugar

1/2 teaspoon ground cumin

1/2 teaspoon ground black pepper

1/4 teaspoon ground red pepper

4 garlic cloves, minced

1/4 cup extra-virgin olive oil

 

2 pounds skinless, boneless chicken thighs, trimmed and cut into bite size pieces

2 large oranges

1/4 teaspoon salt

1/4 teaspoon freshly ground black pepper

Cooking spray

1/4 cup chopped fresh mint (garnish)

 

1) Combine all dressing ingredients except oil, stirring with a whisk.  Gradually add oil, stirring constantly with a whisk until well combined.  Dressing can be stored in an airtight container for up to 5 days in the refrigerator.

 

2) Combine 1/2 cup dressing and chicken in a large zip-top plastic bag.  Seal and marinate in refrigerator 30 minutes, turning bag occasionally.

 

3) Prepare grill to medium-high heat.  A grill top for the stove, George Foreman grill will also work (cooking times may vary).

 

4) Cut each orange into eight wedges; cut each wedge crosswise into three pieces.

 

5) Remove chicken from marinade; discard marinade.  Thread chicken and orange pieces alternately onto 16 (10-inch skewers).  Sprinkle evenly with salt and pepper.  Place kebabs on a grill rack coated with cooking spray and grill 5 minutes on each side until chicken is done, basting occasionally with remaining dressing.  Place kebabs on platter and sprinkle with mint.
